I’ve spend hours and hours uploading hundreds of fabric’s and patterns but when I look at my iPhone storage the app hardly appears to use anything??
The “cloud” (specifically Google Cloud Platform) with regular backups.
Using the cloud means that you can use Stash Hub across multiple devices and platforms and everything syncs.

So if I’m offline ( say on the beach on holiday) am I still able to access ?

A bit. The app will cache most of the information but things like images might not show.
